Better than carrots: Korean-style pumpkin with garlic and spices in 10 minutes

One of the healthiest fall vegetables is pumpkin. You can bake it, add it to salads, make delicious porridge, cream soup, pies, puddings, casseroles, and drinks. It is very important to cook it properly so that the vegetable does not lose its beneficial properties.

Nutritionist Olena Yermolenko shared a recipe for a delicious Korean-style pumpkin with garlic and spices that will taste better than carrots on Instagram.

Ingredients:

  • pumpkin - 300 g
  • coriander - a pinch
  • garlic - 3 cloves.
  • oil - 2 tbsp.
  • sesame seeds - 1 tsp.
  • juice of 1/2 lemon
  • cilantro or parsley - to taste
  • salt and sugar - a pinch

Method of preparation:

1. Peel the pumpkin and cut it into strips with a knife or grate it on a grater for Korean-style carrots.

2. Put the pumpkin in a suitable dish and add spices.

3. Mash or chop the garlic finely, add the hot oil, stir and pour it over the pumpkin. Mix and refrigerate for several hours.
