How to make ''Bird's milk'' at home

Ingredients:

  • butter - 150 g
  • condensed milk - 100 g
  • water - 100 ml
  • sugar - 200 g
  • agar-agar - 8 g
  • protein - 3 pcs.
  • thin bean (you can do without it, if desired) - 1 pc.
  • albumin (if you do not have albumin, you can do without it) - 6 g
  • citric acid - a pinch

Method of preparation:

1. Beat well-softened butter with condensed milk until the mixture lightens.

2. Pour water into a saucepan, grate the tonka bean on a fine grater, add sugar and agar-agar, put the saucepan on the fire, and cook to a temperature of 109°C.

3. Beat the whites well until fluffy and stiff with albumin and citric acid.

4. Pour the finished syrup with condensed milk into the whites.

5. Beat this mixture for about 1 minute, the mass should become stable.

6. Then add the whipped butter and condensed milk, and mix again until smooth.

7. Very quickly pour the mass into the mold and smooth it out, put it in the refrigerator for 5-6 hours.

8. Sprinkle the finished dessert with powdered sugar and serve.
