Better than borscht: vitamin beet soup with ginger and thyme
Borsch is a traditional Ukrainian dish that is loved by almost everyone. Each housewife prepares it in her own way, but the list of basic ingredients remains the same. But if you're bored with the usual dish, you can experiment and change the preparation a little.
Nutrition expert Lana Fore has shared on her website a recipe for a delicious, healthy cream soup made from beets, ginger, and thyme, which will be the best option for lunch and dinner in the fall and winter.
Ingredients:
- vegetable broth - 350 ml
- beets - 300 g
- potatoes - 150 g
- ginger - 10 g
- dried thyme - a pinch
- sour cream - 1 tsp
- fresh parsley and thyme - a few sprigs
Method of preparation:
1. Cook the vegetable broth.
2. Beets can be baked together with potatoes.
3. Peel the vegetables, chop them, and put them in a blender, add the peeled ginger and blend well until smooth.
4. Put the prepared mixture in a saucepan, pour the broth, and bring to a boil.
Serve the soup hot with sour cream and herbs.
