Better than all salads: healthy beetroot caviar according to Olha Matvii's recipe
Beetroot is a versatile vegetable that can be used to make not only borscht and salads but also many delicious and original snacks and bread spreads. Beets can also be used to make pies, pancakes, and risotto.
Cook Olha Matvii shared on her YouTube channel recipes for delicious, healthy, and easy-to-cook beetroot caviar.
Ingredients:
- Fresh beets – 1 kg
- Sweet pepper – 1 pc.
- Tomato paste – 2 tbsp.
- Bay leaf – 1 pc
- Peppercorns – to taste
- Onion – 1 pc
- Carrots – 1 pc
- Lemon juice – 1 tbsp
- Oil – to taste
- Sugar – 2 tbsp
- Salt – to taste
Method of preparation:
1. Peel all the vegetables. Grate the beets on a coarse grater.
2. Heat a frying pan, add oil, and fry the beetroot until soft.
3. Cut the onion into a large cube and fry it in a different pan. Add the grated carrots to the same pan, pour in more oil, and add spices.
4. Add the lemon juice to the cooked beets, add sugar and salt, cover, and simmer.
5. Dice the pepper and add to the carrots and onions. Stew for about 5-7 minutes. Then add the tomato paste.
6. After the onions, carrots, and peppers are cooked, add them to the beets and stir, simmer for about 5 minutes.
The dish will be delicious both cold and hot!
