Better than a casserole: a delicate raspberry and cottage cheese pie on shortcrust pastry
This cottage cheese pie is somewhat reminiscent of your favorite casserole: it's just as tender, airy, fluffy, and melts in your mouth. But it's even juicier because it contains delicious raspberries. In addition, the pie is made with shortcrust pastry and sandy crumbs on top, which gives the dessert a special charm.
Food blogger Iryna Kozachuk (irina_kozachuk_) shared a recipe for a cottage cheese pie with raspberries on her Instagram page.
Ingredients:
Dough:
- flour -–300 g
- sugar – 3 tbsp
- baking powder – 1 tsp
- butter – 160 g
Filling:
- cottage cheese – 600 g
- sugar – 6 tbsp
- eggs – 3 pcs
- raspberries
Method of preparation:
1. Mix flour, sugar and baking powder.
2. Grate the cold butter. Grind the mass to a state of crumbs. Put the dough in the refrigerator.
3. Beat cottage cheese, eggs, and sugar in a blender until smooth.
4. Put most of the dough on the bottom, forming the sides.
5. Put the filling.
6. Put the raspberries.
7. Sprinkle the cake with the remaining crumbs.
8. Bake at 180 °C for 40-45 minutes.
