Berliners with custard: how to make puffy doughnuts at home

Probably everyone at least once in his life has tasted the famous Berliners - very puffy, soft and airy doughnuts with filling. Such a treat will fit perfectly with a cup of cocoa, and will make home gatherings even more cozy.

Burliners with custard

Ingredients:

  • milk - 250 ml
  • sugar - 60 g
  • fresh yeast - 28 g
  • flour - 450 g
  • eggs - 1 pc
  • vanilla sugar - 1 p
  • salt - 0.5 tsp.
  • butter - 50 g
  • powdered sugar

For the cream:

  • milk - 370 ml
  • yolks - 3 pcs
  • flour - 15 g
  • starch - 15 g
  • sugar - 80 g
  • vanilla extract

Method of preparation:

1. First of all, prepare the cream. To do this, bring the milk to a boil.

2. Beat the yolks with the sugar and vanilla extract.

3. Add the flour and starch. Stir until smooth.

4. Pour in the hot milk, stir and pour into a saucepan. Cook over a low heat until thickened, stirring. Cover with clingfilm and allow to cool.

5. To prepare the dough, add the yeast, 1 tbsp sugar and 5-6 tbsp flour to the milk. Stir and cover with clingfilm. Leave in a warm place for 15-20 minutes.

6. Beat the eggs with the sugar and vanilla sugar. Add them to the paste. Stir.

Dough for Berliners

7. Gradually add the flour and salt. Stir. Let the dough rest in a warm place for 1-1.5 hours.

8. Roll out the dough and cut out doughnuts. Allow to rest for 15-20 minutes.

9. Fry in oil until browned. Place the fried doughnuts on a paper towel to drip off excess oil.

10. Dip doughnuts in powdered sugar and fill with cream.
