Benderyky with meat: how to cook a hearty Ukrainian dish
Benderyky are a popular dish of Ukrainian cuisine. They are meat triangles based on pancakes, sometimes with pita bread. Benderyky are versatile, as they are suitable for festive and everyday meals, as an independent meat dish or appetizer.
Ukrainian chef Anatolii Dobrovolskiy (dobrovolskiy_hchef) shared a recipe for meat benderyky made from pancakes on his Instagram page .
Ingredients:
- eggs - 3 pcs.
- sugar - 3 tbsp
- salt - 1 tsp.
- baking powder - 1 tsp.
- boiling water - 200 ml
- milk - 300 ml
- flour - 250 g
- vegetable oil - 3 tbsp. l.
Filling:
- minced meat
- onion - 1 pc
- salt, pepper
Batter:
- eggs - 1 pc
- milk - 3 tbsp. l
- salt
Method of preparation:
1. Mix eggs, sugar, salt and baking powder. Beat with a mixer.
2. Pour boiling water over the mixture, stirring constantly. Mix with a mixer until foamy.
3. Pour in the milk. Stir the mixture.
4. Add the flour. Stir to combine.
5. Add the oil. Stir and fry the pancakes.
6. To prepare the filling, chop the onion. Mix with the minced meat. Add salt and pepper. Mix well.
7. To form the benderiks, cut each pancake in half. Put the minced meat evenly on each half. Wrap in a triangle.
8. For the batter, mix the egg and milk. Add salt and mix well.
9. Roll the triangles in the batter and fry in a pan.
