An ordinary beetroot salad can be prepared in a delicious and healthy new way. To do this, you don't need to use mayonnaise as a dressing. In addition, you should add some ingredients that will make the dish very juicy.

Food blogger Oksana Bilinska (oxana_bil) shared a recipe for  a juicy beetroot salad with onions, sauerkraut, and cucumbers on her Instagram page.

A few tips:

1. To make the salad juicy, add pickled onions to it. It will be enough to marinate it with vinegar and water for 10 minutes. In addition, sauerkraut, as well as pickled or fermented cucumbers will make the dish juicy.

2. To keep the beets from losing their color and to make all the ingredients in the salad clearly visible, chop the beets and mix them with oil. Only then should you add the rest of the ingredients.

How to make a delicious and healthy beetroot salad

Ingredients:

  • onion - 1 pc
  • beets - 1 pc (600 g)
  • potatoes - 3-4 pcs
  • carrots - 2 pcs
  • canned beans/peas - 0.5 l
  • pickled cucumbers - 2-3 pcs
  • sauerkraut
  • salt, pepper

Method of preparation:

1. Pre-bake or boil the beets, carrots and sweet potatoes until tender. When ready, cut the ingredients into cubes.

2. Chop the onion and marinate with vinegar and water for 10 minutes. Then drain the liquid.

3. Dice the cucumbers.

4. Mix all chopped ingredients, adding cabbage and canned beans or peas. Season with salt and pepper.
