Beetroot is a very budget-friendly and healthy vegetable that is worth preparing for the winter. And you can do it in the form of caviar. This appetizer makes delicious sandwiches, or it can be just a side dish.
The idea of making beetroot caviar for the winter is published on the veganstvo_syroedenie culinary page on Instagram.
Ingredients:
- 3 medium beets
- 8 medium tomatoes
- 5-7 cloves of garlic
- 100 ml of vegetable oil
- 1 tsp. red hot pepper
- 1 tbsp. salt or to taste
- 2 tbsp sugar, can be replaced with natural syrup
- 1 tbsp of tomato paste
- a handful of walnuts, if desired
Method of preparation:
1. Grate the beetroot on a fine grater and simmer in oil over low heat for 30 minutes, stirring occasionally.
2. Peel the tomatoes and beat them in a blender.
3. Add to the beets and simmer for another 20-30 minutes.
4. Then add salt, sugar, garlic, tomato paste, and walnuts passed through a press and simmer for another 10 minutes.
5. Put in sterilized jars.
