Basic cottage cheese cakes instead of pancakes: you can wrap any filling
Instead of traditional thin pancakes, you can make cottage cheese cakes. They are quite fluffy because they are cooked with kefir. You can make any filling and you will get a very satisfying snack.
The idea of making fluffy cottage cheese cakes instead of pancakes was published on the Instagram page of food blogger Anastasiia Zhakulina (anastasia_zhakulina). The dough is perfectly fried and does not burn.
Ingredients:
- kefir – 250 ml
- eggs – 1 pc
- hard cheese – 150 g
- salt – 1/2 tsp
- sugar – 1 tsp
- soda – 1 tsp
- flour – 5 tbsp or 150 g
- a bunch of herbs
Method of preparation:
1. Add salt, sugar, baking soda, and egg to the warm kefir.
2. Beat with a whisk until smooth.
3. Add grated hard cheese and chopped herbs, and mix well.
4. Pour in the flour and knead the dough (the consistency will be like thick sour cream).
5. Fry the cakes in a well-heated frying pan over low heat on both sides for 3-4 minutes under a closed lid.
6. For the first pancake, you can grease the frying pan with vegetable oil.
