Food blogger Kateryna Mull shared a recipe for a healthy baked vegetable salad on her Instagram page.
Ingredients:
- eggplants – 2 pcs
- tomatoes – 3 pcs
- pepper – 1 pc
- onion – 1\2 pcs
- lemon juice – 1 tbsp
- oil – 1 tbsp
- cilantro – 4-5 sprigs
Method of preparation:
1. Brush peppers, eggplant, and tomatoes with oil put on a baking sheet, and bake in the oven until tender.
2. Peel the cooked vegetables and chop them finely.
3. Chop the cilantro and onion. Add to the vegetables.
4. Season with oil and lemon juice. Season with salt and pepper.
