Badrijani: a recipe for a spicy Georgian eggplant appetizer with a nut filling

Eggplants are ideal vegetables for making babaganoush, as well as appetizers and caviar. They can also be baked and pickled.

The cook shared a recipe on Instagram for delicious eggplant rolls with a nut filling.

Ingredients:

  • Eggplant - 2-3 pcs.
  • Nuts - 150 g
  • Cilantro
  • Parsley
  • Garlic - 2-3 cloves.
  • Suneli hops - 1 tsp.
  • Paprika - 1 tsp.
  • Chili pepper - 0.5-1 tsp.
  • Salt
  • Wine vinegar - 3 tbsp.
  • Water - 50-100 ml
  • Oil.

Method of preparation:

1. Cut the eggplant into slices about 6 mm thick. Sprinkle a little salt on both sides and leave for 15-20 minutes.

2. Cover a baking sheet with parchment, place the eggplants, and brush with oil on both sides. Bake in the oven at 200 degrees for 10-15 minutes.

3. Filling: grind the nuts, cilantro, parsley, garlic, spices, and wine vinegar in a blender and add water a little at a time.

4. Brush the eggplant with the sauce and wrap the rolls.

Garnish with herbs and pomegranate seeds when serving!
