Autumn pumpkin cream soup with oranges and turmeric in 20 minutes
Pumpkin is a simple product that is one of the healthiest vegetables. It can be used to make many different delicious dishes, from cereals to pies, salads, cheesecakes, pancakes, and soups.
Chef Mykola Liulko shared a recipe for a delicious pumpkin cream soup with ginger, orange juice, and zest on Instagram.
Ingredients:
- Pumpkin - 700 g
- Potatoes - 150 g
- Carrot - 220 g
- Onion - 170 g
- Ginger root - 25 g
- Garlic - 15 g
- Orange - 1 pc.
- Milk - 1 liter
- Salt - 10 g
- Turmeric - 1 tsp.
Method of preparation:
1. Wash the pumpkin, peel it, cut it, put it on a baking sheet and bake until tender.
2. Cut the onion, potatoes, carrots, garlic into medium dice and fry well until golden brown.
3. Put the cooked pumpkin into the pan and fry for about 2-4 minutes. Then pour in the milk, add the chopped ginger, grated zest, orange juice, turmeric and mix well. Simmer for about 5 minutes.
4. Put the mixture in a blender and blend until smooth, then strain through a sieve.
5. Pour the prepared soup into a bowl, sprinkle with breadcrumbs and eat!
