You can complement cold but very cozy family autumn evenings with delicious pastries. It's a good idea to make a festive pie. This dish can be made with your favorite fillings, sweet or savory, but the most important ingredient is love.

Famous Ukrainian pastry chef Liza Hlinska shared her ideas for making delicious and basic sweet pies with autumn fillings. It was published on her Instagram page.

Pear pie with spices

  • pears in red wine with spices – 10-11 pcs.
  • red wine (semi-dry) – 750 ml
  • sugar – 100 g
  • spice mix (cinnamon, cloves, star anise, cardamom)

Ingredients for the sponge cake:

  • butter (softened) – 200 g
  • powdered sugar – 200 g
  • eggs – 200 g
  • flour – 250 g
  • baking powder – 8 g
  • round mold, d 25 cm

Method of preparation:

  1. Peel the pears, leave the tail on.
  2. Put them in a saucepan so that it is easy to take them out, cover with sugar.
  3. Add spices, pour wine.
  4. Cook for 25-30 minutes.
  5. Take out the pears.
  6. Cook the syrup for another 15-20 minutes.
  7. Beat the soft butter.
  8. Add the powder, stir.
  9. Combine the flour and baking powder, add to the mixture.
  10. Stir until smooth.
  11. Grease a baking dish, sprinkle with flour and put the dough in it.
  12. Smooth it out, place the pear, scrolling inward.
  13. Wrap the tails in foil.
  14. Put in an oven preheated to 165 degrees for 30-35 minutes.
  15. Then take it out.
  16. Immediately soak in hot wine syrup.

 

Chocolate pie with cherries

Ingredients for the filling:

  • cherries (pitted, fresh, frozen, in their own juice) – 300 g
  • sugar – 50 g
  • corn starch – 20 g
  • round mold with a diameter of 26 cm

Ingredients for the chocolate sponge cake.

  • egg yolk – 100 g
  • sugar (to the yolk) – 50 g
  • protein – 150 g
  • sugar – 100 g
  • flour – 110 g
  • cocoa powder – 30 g
  • dark chocolate – 70 g

Method of preparation:

  1. Mix sugar and starch, add to cherries, stir.
  2. Bring to a boil, stir constantly. Boil for 30 seconds.
  3. Let it cool down.
  4. Beat the yolks with sugar.
  5. Beat the whites with sugar until stiff peaks.
  6. Combine the masses.
  7. Mix flour, cocoa powder, add to the main mass in small portions through a sieve, stir in

  9. Put half of the dough into the mold
  10. Add the filling, cover with the rest of the dough
  11. Put in a preheated oven to 170 degrees for 35-40 minutes with a blower mode.
  12. Let the finished cake cool, remove the mold and decorate with cocoa.

Plum pie with sour cream

  • round mold with a diameter of 20 centimeters

Ingredients for the dough:

  • flour – 100 g
  • butter – 50 g
  • egg yolk – 40 g
  • sugar – 30 g
  • baking powder – 3 g
  • salt

Sour cream filling.

  • sour cream ( 15-20%) – 200 g
  • eggs – 50 g
  • sugar – 70 g
  • corn starch – 10 g
  • cinnamon – 0.5 tsp.
  • plums – 300 g

Method of preparation:

  1. Turn on the oven to 180 degrees with a fan.
  2. Mix the egg yolks with sugar.
  3. Combine flour, baking powder and salt.
  4. Grate the cold butter, mix it with the flour into crumbs.
  5. Add it to the sugar and eggs and knead the dough.
  6. Wrap in plastic wrap and place in the freezer for 10 minutes.
  7. Cut the cream into 6 pieces, add cinnamon, and mix.
  8. Prepare the sour cream filling: mix eggs with sugar,
  9. Add starch, mix.
  10. Add sour cream, mix.
  11. Form the pie: put the dough in the mold, smooth it out, forming the sides.
  12. Put in the plums.
  13. Pour the sour cream mixture, leaving 1-2 mm of the edges free.
  14. Place in a preheated 180-degree oven for 30-35 minutes.
  15. Let cool, sprinkle with powder.
