Authentic Poltava halushky with kefir: perfect for soup

Halushky or dumplings are a delicious, hearty, and quick-to-prepare Ukrainian dish made with a minimum of ingredients. They can be made with potatoes or ordinary dough with water, sour cream, or kefir. Halushky can become a complete and independent dish if served with fried onions or just sour cream.

Food blogger Oleksiy Kryuchkov, known as kruchkov.food, shared a recipe for kefir halushky on his Instagram page.

Ingredients:

  • kefir - 250 ml
  • flour - 400 g
  • eggs - 1 pc
  • salt - 1 tsp
  • sugar - 2 tbsp
  • onion/sour cream (optional)

Method of preparation:

1. First, mix flour, kefir, salt, 1 tbsp of sugar and an egg. Knead elastic dough for about 5 minutes. Leave it for a while to rest.

2. Meanwhile, you can make a roast for the dumplings if you wish. To do this, cut the onion into cubes and fry them until golden brown with the addition of sugar.

3. Next, shape the dough into a sausage. Pinch off small pieces of dough with your hands and throw them into boiling water. Cook until they float to the top.

4. Serve the dumplings with fried onions and sour cream.
