ingredients
- eggplant - 600 g
- onions - 6 pcs
- refined sunflower oil - 110 ml
- hot pepper - 1 pc
- sweet pepper (bell pepper) - 500 g
- tomatoes - 500 g
- garlic - 3-6 cloves
- parsley, cilantro - 50 g each each
Method of preparation:
- Wash the eggplant, peppers, and tomatoes and cut 3 onions into cubes.
- Take the remaining 3 onions and cut them into rings. Fry in vegetable oil until golden brown.
- Add the red pepper and eggplant, stir well and add oil from time to time.
- At the very end, chop the garlic and add it to the vegetables, as well as hot peppers and herbs.
The finished dish can be eaten both hot and cold, and the taste will not spoil.
