Artificial intelligence has identified the perfect pancake recipe
British scientists have compared the most popular pancake recipes from the Internet and used the Monolith artificial intelligence program to find the best way to cook them.
Thus, engineers from Imperial College London studied more than 800 recipes for "American-style pancakes" (i.e. pancakes), the Daily Mail reports. Experts took recipes with a large number of reviews, both positive and negative. This was necessary to teach artificial intelligence to predict how many ingredients will produce the most delicate and airy pancakes.
"As a result, we got a dataset of 31 recipes with enough feedback to teach the model to predict the outcome," the scientists say.
After that, Monolith performed hundreds of thousands of calculations, divided into three stages: ingredients, mixing, and frying. As a result, the artificial intelligence gave out the proportions that it believes are ideal:
- 210 g of flour;
- 2 eggs;
- 256 ml of milk;
- 25 g of butter;
- 48 g of sugar;
- 14 g of baking powder;
- 6 g of salt.
This set of products makes perfect American-style pancakes. Scientists note that dry ingredients should be mixed separately from wet ones, and only then combine both masses.
Monolith also gives some more tips for making the most perfect pancakes.
- Do not mix the batter for too long: this can lead to the pancakes turning out to be elastic rather than airy.
- Once you have mixed all the ingredients, you can pour the batter into the pan.
- The frying pan must be pre-greased with vegetable oil.
- The pan should be heated to medium temperature – this is if you are using an electric stove. For a gas stove, you need to heat the pan just a little bit.
- As soon as the bottom side is baked and the top side is covered with bubbles, the pancake should be turned over.
