Apricot pie with cottage cheese filling: when you don't know what to do with seasonal fruits

Food blogger Liza Hlinska shared a recipe for an apricot pie with cottage cheese filling that is very easy to implement. On Instagram, she also noted that plums can be used in this recipe.
Ingredients for shortbread crumbs
- Flour – 50 gr
- Sugar – 30 gr
- Butter 62% – 30 g
- Salt
Ingredients for the dough
- Butter 62% – 100 gr
- Eggs – 100 gr
- Flour – 100 gr
- Baking powder – 5 g
- Sugar – 80 g
- Vanilla sugar – to taste
Ingredients for the cottage cheese filling
- Cottage cheese – 350 g
- Eggs – 2 pcs
- Sour cream 10-15% – 150 g
- Sugar – 80 gr
- Apricots – 350 g
The method of preparation
1. Prepare the crumble. Mix flour, sugar, salt.
2. Add cold butter and make shortbread crumbs. Put it in the freezer.
3. Prepare the dough. Beat soft butter, add sugar and vanilla sugar, and mix well.
4. Add the eggs at room temperature. Mix well.
5. Mix the flour with the baking powder. Add and mix until smooth.
6. Prepare the cottage cheese filling. Mix all the ingredients and beat until smooth.
7. Take a mold with a diameter of 20-22 cm. Put parchment on the bottom, and grease the sides of the mold with butter.
8. Spread the dough and smooth it out. Spread the cottage cheese filling. And then the apricot halves. Sprinkle with sand crumbs.
9. Put it in a preheated oven. Bake at 170 degrees for 45-50 minutes.
10. Leave for 2-3 hours to cool.
