Apricot pie: a recipe for a successful shortcrust pastry
The apricot pie will pleasantly surprise you with its delicate structure and incredible taste. The dessert is made from the simplest shortcrust pastry and airy milk filling, which goes well with juicy apricots. It's easy to prepare, bakes quickly, and tastes delicious.
Food blogger Snizhana Dudok (snizhana.dudok) shared a recipe for apricot pie on her Instagram page.
Ingredients for a 23 cm diameter mold:
Dough:
- flour – 230 g
- butter – 150 g
- sugar – 50 g
- vanilla sugar – 15 g
- eggs – 1 pc
- cold milk – 2 tbsp
The filling:
- eggs – 3 pcs
- milk – 250 ml
- sugar – 100 g
- vanilla sugar – 15 g
- flour – 80 g
- apricots
Method of preparation:
1. For the dough, mix the flour, sugar and vanilla sugar. Add the butter and grind to a state of crumbs.
2. Add the egg and milk. Knead a smooth dough. Wrap in plastic wrap and refrigerate for 40 minutes.
3. Meanwhile, prepare the filling. Beat eggs with sugar and vanilla sugar until fluffy and white.
4. Add the milk. Stir to combine.
5. Add the flour and mix until smooth.
6. Pit the apricots.
7. Put the dough evenly into the mold, forming the sides. Put the apricots.
8. Pour the filling.
9. Bake at 180 degrees for 40-50 minutes.
