An elementary summer pie with red currants: be sure to prepare for tea for your family
It's time to use seasonal fresh berries for sweet pastries and make a fluffy red currant pie. It will be moderately sweet, with a light and pleasant sourness. This dessert is perfect for the summer heat, when you don't really want sugary desserts.
The idea of making a lazy pie with currants for tea was published on the Instagram page of food blogger Yulia Senych (yuliia.senych). It bakes very quickly.
Ingredients:
- eggs - 6 pcs.
- flour - 200 g
- soft butter - 200 g
- sugar - 180 g
- baking powder - 1 tsp.
- vanilla sugar - 2 packs
- Powdered sugar for meringue - 150 g
- butter for greasing the mold
Ingredients for the filling:
- red currants - 400 g
Method of preparation:
1. Cream soft butter with sugar and vanilla sugar.
2. Mix until well combined.
3. Separate four eggs into whites and yolks.
4. Add two whole eggs and four yolks to the dough.
5. Leave the whites in the refrigerator for meringue.
6. Sift the flour and baking powder into the dough and mix until combined.
7. Put the dough into a mold greased with butter or oil.
8. Put half of the total weight of currants on top of the dough.
9. Put the pie in the oven preheated to 180 degrees for 30-40 minutes.
10. For the meringue, beat the chilled whites with a mixer with the addition of powdered sugar until thick peaks (about 5 minutes).
11. Remove the pie from the oven, top with the remaining currants and whipped whites.
12. Put the pie back in the oven for about 30 minutes, but at a temperature of 120 degrees.
