An eggplant appetizer with a spicy filling that everyone will love: it takes only 10 minutes to prepare

Eggplants are versatile vegetables that can be used to make many delicious, savory, and yet simple dishes, such as salad, caviar, cake, and spread. They are also canned, pickled, salted, and made into spicy salads.

Chef Dariia Vystovska (vistovvska_daria ) shared a recipe on Instagram for delicious, spicy eggplant rolls with a spicy filling of melted cheese and garlic.

Ingredients:

  • eggplant – 1 pc
  • processed cheese – 1 pc
  • boiled egg – 1 pc
  • any greens – 10 g
  • garlic – 1-2 cloves
  • mayonnaise – 1-2 tbsp
  • nuts – a handful

Method of preparation:

1. Wash and thinly slice the eggplant, salt and leave for 15 minutes.

2. Grate the cheese, garlic and egg. Mix with mayonnaise.

3. Wash and chop the greens, add to the filling, and mix. Season with salt and pepper.

4. Fry the eggplants, and put them on a paper towel to absorb the excess fat.

5. Put the filling in the eggplant, and roll it up.

Sprinkle the rolls with nuts before serving and you're ready to go!
