Airy and light: summer berry tea pie in 20 minutes
In summer, pies are best made with healthy berries and fruits. Raspberries, currants, blackberries, cherries, apples, and nectarines will be delicious.
The cook shared a recipe for a delicious berry pie on Instagram, based on sour milk cheese, starch, and eggs.
Ingredients:
Curd filling:
- 300 g of sour milk cheese
- 1 egg
- 2 tbsp. sugar
- vanillin
- zest of one lemon
- 1 tbsp. starch
The dough:
- 2 eggs
- 130-150 g of sugar
- vanillin
- a pinch of salt
- 90 ml. oil or melted butter
- 150 ml. milk
- 260 g. of flour
- 1.5 tsp. baking powder
- 300 g of berries/fruits
Method of preparation:
1. For the sour milk cheese filling: mix all the ingredients and beat until smooth with a blender.
2. For the dough: add sugar, vanilla, salt to the eggs and beat with a mixer until white. Pour in the vegetable or melted butter, milk and beat at low speed until smooth.
3. Sift the flour, add the baking powder and beat on low speed of the mixer until smooth, do not knead for a long time.
4. Pour the finished dough into a baking dish, top with berries, fruit and sour milk cheese filling. Put in a preheated 180-degree oven for 40-45 minutes.
Check the readiness of the dough with a wooden stick, it should be dry at the end!
