Adjarian khachapuri with cheese: how to cook flavorful pastries at home

Khachapuri is a delicious and flavorful Georgian pastry that comes in many shapes and forms. One of the variants is Adjarian khachapuri, which is based on soft yeast dough and cheese filling. The recipe for home baking is very simple, the main thing is to observe the proportions.

Food bloggerOksana Kretsul (oksana_kretsul) shared a recipe for homemade Adjarian khachapuri on her Instagram page.

Ingredients:

  • flour - 500 g
  • dry yeast - 7 g
  • warm water - 300 ml
  • salt - 10 g
  • sugar - 1 tbsp
  • vegetable\sunflower oil - 30 tbsp.

Filling:

  • Suluguni cheese - 250 g
  • Adyghe cheese - 250 g
  • eggs - 1 pc
  • water - 50-70 g
  • salt
  • yolk (for filling for each khachapuri)

Method of preparation:

1. Mix flour, sugar, salt, dry yeast and water. Stir until the dough is smooth.

2. Gradually add the oil in two stages. Stir to combine. Put the finished dough into a greased bowl, cover with a towel or plastic wrap and leave in a warm place.

3. Prepare the filling: grate the cheese, then mix it with the egg, salt and water.

4. When the dough is ready, divide it into 2 or 4 portions and roll each one out by hand. The center of each portion should be thin. Form the so-called boats with sides.

5. Put the filling inside.

6. Bake at 180 degrees for 20-30 minutes.

7. When the khachapuri are baked, put one egg yolk inside each and bake for another 2 minutes.
