Adjarian khachapuri: we tell you how to cook a delicious dish at home

Cook Victoria shared a recipe for delicious Adjarian khachapuri on Instagram, which is very simple and quick to prepare.
Ingredients:
- flour - 400 g
- water - 150 ml
- milk - 100 ml
- oil - 40 ml
- salt - 1 tsp.
- sugar - 2 tsp.
- dry yeast - 1 tsp.
The filling:
- cottage cheese - 600 g
- Suluguni cheese - 100-150 g
- eggs - 3-4 pcs.
- butter
Method of preparation:
1. Mix yeast, sugar and water, cover with cling film and leave for 10 minutes.
2. Mix the water, milk, yeast water that you made 10 minutes ago, and half the flour, mix with a spatula or spoon. Then add the other half of the flour and salt and mix. Knead the dough on a pre-greased table.
3. Then transfer the dough to a greased bowl, cover with plastic wrap and a towel, and leave it in a warm place for 40-45 minutes. After that, knead it well and cover it again and leave it for another 40 minutes.
4. Grate the cheese, add the egg, mix and divide into 3 equal parts.
5. Divide the dough into 3 parts, form balls, cover with plastic wrap or a towel and leave for another 15 minutes. After the dough balls are formed, do not knead them anymore, but start rolling them into an oval shape.
6. Form the Adjarian khachapuri, first wrap half of the cheese in the sides of the future boat, form the boat, put it on a baking sheet covered with parchment and put the remaining filling in the middle. Brush the edges of the boat with a beaten egg and put it in a preheated oven for 15-20 minutes, until golden brown.
7. Top the hot khachapuri with the egg yolk and a few slices of butter and serve.
