Adjarian khachapuri: how to cook a delicious dish at home

Ingredients:
- flour - 400 g
- water - 150 ml
- milk - 100 ml
- oil - 40 ml
- salt - 1 tsp.
- sugar - 2 tsp.
- dry yeast - 1 tsp.
The filling:
- cheese - 600 g
- Suluguni cheese - 100-150 g
- eggs - 3-4 pcs.
- butter
Method of preparation:
1. Mix yeast, sugar and water, cover with cling film and leave for 10 minutes.
2. Combine the water, milk, yeast water you made 10 minutes ago, and half the flour, mix with a spatula or spoon. Then add the other half of the flour and salt. Knead the dough on a lightly oiled table.
3. Then put the dough into a bowl greased with oil, cover with cling film and a towel, and leave it in a warm place for 40-45 minutes. After that, knead it well, cover it again and leave it for another 40 minutes.
4. Grate the cheese, add the egg, mix and divide into 3 equal parts.
5. Divide the dough into 3 parts, form balls, cover with plastic wrap or a towel and leave for another 15 minutes. After that, don't knead the dough balls anymore, but start rolling them into oval shapes right away.
6. Form the Adjarian khachapuri, first wrap half of the cheese in the sides of the future boat, form the boat, put it on a baking sheet covered with parchment, and put the remaining filling in the middle. Brush the edges of the boat with a beaten egg and put it in a preheated oven for 15-20 minutes, until golden brown.
7. Top the hot khachapuri with the egg yolk and a few slices of butter and serve.
