Rabbit meat is an ideal product because it is very healthy, and secondly, it is absorbed by the body by 90%. It contains a lot of trace elements necessary for the body – iron, phosphorus, magnesium, and B vitamins. It is also low in fat and bad cholesterol.

Ravshan Hamidov, a participant of the reality TV show Hell's Kitchen (New Channel), shared his recipe for a delicious dish with FoodOboz exclusively – rabbit back with apple and carrot cream.

Ingredients:

  • Back of boneless rabbit - 150 g
  • Apple - 1 pc.
  • Carrot - 1 pc.
  • Potatoes - 1 pc.
  • Rosemary - 5 g
  • Chicken broth - 50 ml
  • Sea salt - 2 g
  • Truffle oil - 5 ml
  • Cream - 200 ml
  • Sunflower oil - 50 ml

Method of preparation:

  1. Cut the back of the rabbit into equal slices, and salt well.
  2. Put it in a hot frying pan and fry over high heat, cover with water and simmer for 45 minutes.
  3. Then add the cream and apple, and turn off the heat.
  4. Separately, boil carrot and potato balls cut with a paring knife in the broth. (If you don't have a paring knife, cut them into cubes). Add sea salt and truffle oil.
  5. Boil the vegetable trimmings and apples, season to taste with salt and sugar.
  6. Blend in a blender until smooth.
  7. Put the vegetable cream on the bottom of the plate, and place the vegetable balls around it. Place the rabbit back in the center of the plate.
