Time passes but something still remains the same: a salad without which no meal is complete. Yes, it's Olivier. A little variety never hurt anyone, so it's worth making a delicious alternative that is very close to the original version.

Chef Olha Martynovska shared the idea of the salad and all the secrets of its preparation on her Instagram page.

Recipe.

Ingredients:

  • quail breast - 4 pcs
  • quail eggs - 6 pcs
  • homemade mayonnaise - 2 tbsp
  • capers -1 tbsp
  • chopped gherkins - 1 tbsp
  • boiled unpeeled potatoes - 1 pc
  • garlic - 3 pcs
  • green onions
  • Romaine or Iceberg lettuce
  • thyme

How to cook:

  1. Melt butter in a frying pan and add whole garlic cloves and thyme. Put the breasts on top. Season with salt and pepper and fry on both sides until golden brown.
  2. Cut the gherkins into slices. Chop the green onions.
  3. Mix mayonnaise, onions, capers and cucumbers.
  4. Put the resulting sauce on a plate. Put lettuce leaves on top.
  5. Put the halved potatoes in the middle. Place boiled quail eggs and breasts around the edges.
  6. Sprinkle with spices and garnish with chopped green onions.

Tips from the chef:

  • It is important not to overcook the quai. It should remain pink inside.
  • Use only homemade mayonnaise.
  • Quail eggs should be cooked for no more than 1 minute.
  • Choose a starchy type of potatoes and do not overcook them.
