6 steak recipes for those who don't eat meat

Veganism is not a reason to give up steaks. You can always cook a so-called alternative steak, which is what chefs call dishes that are not made from beef.

The FoodOboz editorial team tells you how to make steaks from tofu soy cheese, as well as pumpkin, eggplant, and various types of cabbage. They definitely do not need any degree of searing.

Cauliflower steak

Cauliflower steak with herbs and garlic

  • cauliflower - 1 pc.
  • garlic - 2-3 cloves
  • dried herbs - to taste
  • vegetable oil - 4 tbsp
  • salt and pepper - to taste
  1. Wash the cabbage, and cut it into slices. Put each slice in boiling salted water for a couple of minutes.
  2. Mix oil, herbs, salt, and pepper in a cup. Squeeze in the garlic. Stir, then brush the steaks with the mixture using a silicone brush.
  3. Put on a baking sheet covered with parchment, put in a 180-degree oven, and bake for 15 minutes until golden brown.
pumpkin steak

Pumpkin steak with hummus and tabbouleh

  • long pumpkin - 1 pc.
  • oil - 4 tbsp
  • salt, pepper - to taste
  • hummus - for serving
  • tabbouleh salad - for serving
  1. Wash the pumpkin, peel it, and cut it into 0.5 cm thick layers.
  2. Put into a heated and oiled frying pan, fry over medium heat under a lid until golden brown on both sides.

cabbage steak

Cabbage steak with smoked paprika

  • white cabbage - 1 pc.
  • smoked paprika - 0.5 tsp.
  • vegetable oil - 3 tbsp
  • salt and pepper - to taste
  1. Wash the cabbage, and cut it into rings lengthwise.
  2. Mix the oil and spices in a cup, and grease the cabbage well on all sides with the mixture.
  3. Put it on a baking sheet covered with foil or parchment, put it in an oven heated to 200 degrees, and bake for 20-25 minutes.
Tofu

Tofu steak with peanut sauce

  • tofu - 300 g
  • soy sauce - 3 tbsp
  • curry powder - 2 tbsp. 

For the peanut sauce:

  • peanut butter - 0.5 cups
  • honey or sugar - 1 tsp.
  • garlic - 1 small clove
  • ginger - a small piece (2-3 cm)
  • soy sauce - 2 tbsp.
  • lemon juice - 1 tbsp
  • ground chili - to taste
  1. Cut the tofu into finger-thick slices.
  2. In a bowl, mix soy sauce and curry, dip the tofu slices into the mixture.
  3. Put on a baking sheet covered with parchment or foil, put in a 200-degree oven, and bake for 7-10 minutes.
  4. Prepare the peanut sauce. Peel the ginger and garlic, chop finely with a knife, and put in a blender.
  5. Add all the other ingredients and blend until smooth. If the sauce is too thick, you can add a couple of tablespoons of water and whisk again.
  6. Pour the sauce over the cooked steaks.

Blue cabbage steak with pesto sauce

  • blue cabbage - 1 pc.
  • salt, pepper - to taste
  • oil - 3 tbsp
  • pesto sauce - for serving
  1. Wash the cabbage, pat dry, and cut into rings.
  2. Brush with oil on all sides, sprinkle with salt and pepper.
  3. Put on a baking sheet covered with parchment or foil, put in a 200-degree oven, and bake for 20-25 minutes.

Eggplant steak

Eggplant steak with spicy salsa

  • large eggplant - 1 pc.
  • garlic - 2 cloves
  • oil - 1 tbsp
  • balsamic sauce - 1 tbsp.
  • soy sauce - 2-3 tbsp.

For spicy salsa:

  • fresh tomatoes - 2 pcs.
  • cilantro or parsley - 5-6 sprigs
  • chili pepper - 1 pc.
  • garlic - 2 cloves
  • salt - to taste
  • olive oil - 1 tbsp.
  1. Wash the eggplants, and cut them lengthwise into layers.
  2. Pass the garlic through a press or grate it on a fine grater. Mix with oil, soy sauce and balsamic.
  3. Dip the eggplants in the mixture, and put them on a preheated and oiled grill pan. Fry over medium heat until golden brown on both sides.
  4. Prepare the spicy salsa. Cut the tomatoes into small cubes, and finely chop the garlic, chili, and herbs with a knife. Mix everything, season with olive oil and salt, and mix again. Serve the salsa with the cooked eggplant.
