1. Fresh zucchini salad
Ingredients:
- young zucchini – 500 g
- garlic – 3 cloves
- honey – 1 tbsp
- vinegar – 1 tbsp
- salt – 2 tsp
- lemon juice – 20 ml
- vegetable oil – 100 ml
- allspice – to taste
Method of preparation:
- Wash the zucchini, dry it, and cut into thin slices, put it in a large bowl and add lemon juice, salt, pepper, and leave it to marinate for 15 minutes.
- Prepare the marinade: mix the oil, add the garlic, honey, salt, vinegar, and pepper.
- Drain the juice from the zucchini and add the marinade, refrigerate for 1-2 hours.
Add chopped herbs before serving.
2. Zucchini and tomato salad
- Young zucchini – 2 pcs
- Cucumbers – 3 pcs
- Cherry tomatoes – 10-12 pcs
- Lettuce or romaine – 1 bunch
- Green basil – 2-3 sprigs
- Green onions – 2-3 pcs
- Oil – 100-150 ml
For the dressing:
- oil, balsamic vinegar
- salt, pepper, orange, paprika – to taste
Method of preparation:
- Wash the cabbage well, and cut into cubes.
- Heat the oil in a frying pan, add the zucchini cubes rolled in flour, and fry until golden brown.
- When ready, put them on a paper towel to absorb all the oil.
- Chop the herbs, put them in a large bowl, put the zucchini on top, season with salt and pepper, chop the tomatoes and cucumbers, and mix everything.
Before serving, add any soft cheese, garlic, and other vegetables to your taste.
3. Warm zucchini and pepper salad
Ingredients:
- Zucchini – 2 pcs
- Greens – 1 bunch
- Iceberg lettuce – 1 bunch
- Garlic – 2 cloves
- Olive oil – 50 ml
- Sweet pepper – 1 pc
- Feta – 50 g
- Roasted sesame seeds – to taste
- Salt, pepper – to taste
Method of preparation:
- Wash the zucchini, cut it into slices, season with salt and pepper, and leave it to stand for 10-15 minutes to let the juice flow.
- It is better to take a grill pan to fry the zucchini, brush it with a little oil and fry it.
- Then transfer to a regular frying pan and stew well with the bell pepper.
- Put the iceberg in a bowl, add chopped garlic, herbs, zucchini, and peppers, and crumble the cheese, sprinkle with sesame seeds.
