  • eggplants - 800 g
  • eggs - 2 pcs.
  • hard cheese - 100 g
  • milk - 50 ml
  • garlic - 3 cloves.
  • rye bread - 3 pieces
  • breadcrumbs - 50 g
  • vegetable oil - 1-2 tbsp
  • salt, pepper - to taste

Method of preparation:

  1. Wash and cut the eggplant into small cubes.
  2. Heat oil in a frying pan, fry the eggplant until golden brown, and leave to cool.
  3. Grate the cheese on a coarse grater.
  4. Chop the garlic, and cut the onion into large pieces.
  5. Soak the bread in milk.
  6. Put all the ingredients in a blender, add the egg, salt, and pepper, and beat until smooth.
  7. Form cutlets from the minced meat, roll them in breadcrumbs, and fry until crispy.
  8. Put the finished patties on a paper towel to drain all the excess fat.

2. Eggplant boats with minced fish and tomatoes

Ingredients:

  • eggplant - 3 pcs.
  • any fish fillet to your taste - 400g
  • tomatoes - 2 pcs.
  • onion - 1 pc.
  • butter - 100 g
  • hard cheese - 100 g
  • salt, pepper - to taste
  • any greens - 1 bunch

Method of preparation:

  1. Wash the eggplants, and cut off the stems.
  2. Cut the eggplants lengthwise to make "boats", select the middle.
  3. Wash the tomatoes and peel them, dice the tomatoes.
  4. Dice the fillet as well.
  5. Peel and chop the onion, mix with the fish and tomatoes, season with salt and pepper, mix, and put in the "boats".
  6. Cover a baking sheet with parchment, grease with vegetable oil, place the finished boats, and sprinkle with hard cheese on top.
  7. Put in the oven for 50 minutes at 170 C.

The finished dish can be eaten immediately hot, with fresh vegetables.

  • water - 1 liter
  • hard cheese - 150 g
  • eggs - 1 pc.
  • garlic - 3-4 cloves.
  • breadcrumbs - 100 g
  • olive oil - 1-3 tbsp
  • salt, pepper, paprika, turmeric - to taste

Method of preparation:

  1. Wash and cut the eggplants into strips - 3 centimeters and be sure to cover them with salted water, so the bitterness will "go away".
  2. Then put the eggplants on a paper towel to dry.
  3. Put them in a bowl, add olive oil, sprinkle with spices, add chopped garlic, and mix. Leave it for 10 minutes.
  4. Grate the cheese on a coarse grater and mix with the breadcrumbs.
  5. Beat the egg with salt.
  6. Cover a baking sheet with parchment, dip each slice in the egg, then put it in the breadcrumbs, roll it well, and put it on the parchment.
  7. Put in the oven for 20 minutes at 200 C.

You can eat the dish both hot and cold - it will be equally delicious.
