1. Eggplant cutlets
Ingredients:
- eggplants - 800 g
- eggs - 2 pcs.

- milk - 50 ml
- garlic - 3 cloves.
- rye bread - 3 pieces
- breadcrumbs - 50 g
- vegetable oil - 1-2 tbsp
- salt, pepper - to taste
Method of preparation:
- Wash and cut the eggplant into small cubes.
- Heat oil in a frying pan, fry the eggplant until golden brown, and leave to cool.
- Grate the cheese on a coarse grater.
- Chop the garlic, and cut the onion into large pieces.
- Soak the bread in milk.
- Put all the ingredients in a blender, add the egg, salt, and pepper, and beat until smooth.
- Form cutlets from the minced meat, roll them in breadcrumbs, and fry until crispy.
- Put the finished patties on a paper towel to drain all the excess fat.
2. Eggplant boats with minced fish and tomatoes
Ingredients:
- eggplant - 3 pcs.
- any fish fillet to your taste - 400g
- tomatoes - 2 pcs.
- onion - 1 pc.
- butter - 100 g
- hard cheese - 100 g
- salt, pepper - to taste
- any greens - 1 bunch
Method of preparation:
- Wash the eggplants, and cut off the stems.
- Cut the eggplants lengthwise to make "boats", select the middle.
- Wash the tomatoes and peel them, dice the tomatoes.
- Dice the fillet as well.
- Peel and chop the onion, mix with the fish and tomatoes, season with salt and pepper, mix, and put in the "boats".
- Cover a baking sheet with parchment, grease with vegetable oil, place the finished boats, and sprinkle with hard cheese on top.

- olive oil - 1-3 tbsp
- salt, pepper, paprika, turmeric - to taste
Method of preparation:
- Wash and cut the eggplants into strips - 3 centimeters and be sure to cover them with salted water, so the bitterness will "go away".
- Then put the eggplants on a paper towel to dry.
- Put them in a bowl, add olive oil, sprinkle with spices, add chopped garlic, and mix. Leave it for 10 minutes.
- Grate the cheese on a coarse grater and mix with the breadcrumbs.
- Beat the egg with salt.
- Cover a baking sheet with parchment, dip each slice in the egg, then put it in the breadcrumbs, roll it well, and put it on the parchment.
- Put in the oven for 20 minutes at 200 C.
You can eat the dish both hot and cold - it will be equally delicious.
