Soup is a healthy, rich dish that can be entirely vegetable, cheese, or meat – it all depends on your preferences. As a rule, it is easy to prepare, you just need to observe the proportions and you will get a terrific option for a hearty lunch or dinner.

1. German thick pichselsteiner
Ingredients:
- meat broth or water - 1-2 liters
- potatoes - 5 pcs.
- carrots - 3 pcs.
- celery root - 1 pc.
- leek - 1 pc.
- parsley - 1 bunch
- onion - 2 pcs.
- three types of any meat - 600 g
- salt, pepper - to taste
How to cook:
- First of all, cut the meat into medium slices.
- Peel and finely chop the onion.
- Peel and dice the potatoes and celery.
- Cut the leeks and carrots into thin rings.
- Pour water into a saucepan, add the meat and all the other vegetables, and send it to cook over low heat for 1.5 hours, be sure to remove the foam.
- At the very end, add chopped parsley, salt, and pepper to the finished soup.
2. Spicy Mexican tortilla
Ingredients:
- chili pepper - 1 pc.
- tomatoes - 400 g
- chicken broth - 1.5 liters
- garlic - 3 cloves.
- oil - 2 tbsp.
- onion - 1 pc.
- chicken breast - 700 g
- avocado - 1 pc.
- hard cheese - 100 g
- dried cilantro - 1/4 tsp.
- corn chips - 4 cups
- sour cream - 2 tbsp
- lime - 2 pcs.
- salt, pepper - to taste
Method of preparation:
- Wash, chop, and fry the chili peppers in a frying pan with a thick bottom over high heat.
- Be sure to remove all the seeds from it and grind it in a blender along with diced tomatoes.
- Peel the garlic along with the onion and chop it, fry it in vegetable oil until golden brown.
- Then put them in a blender with tomatoes, and chili and grind until smooth.
- Pour the resulting mixture into a saucepan, cook over medium heat, be sure to bring it to a boil, and then cook for 8-10 minutes.
- Add the finished broth, and cilantro, and cut the chicken breast into medium pieces.
- Mix everything and cook for 15 minutes.
- Cut the avocado into a medium cube.
- Before serving, put the chips on the plates, pour the soup, and add grated hard cheese, avocado, sour cream, and lime wedges.
3. American soup with wild rice, mushrooms, and chicken
Ingredients:
- wild rice - 1 cup
- onion - 1 pc.
- carrots - 2 pcs.
- celery stalks - 2 pcs.
- oil - 3 tbsp
- flour - 100 g
- thyme - 1 tsp.
- mushrooms - 200 g
- chicken broth - 2 liters
- boiled chicken - 300 g
- cream - 1 cup
- salt, pepper - to taste
- parsley - 1 bunch
Method of preparation:
- Wash rice well and cook in 1 liter of water until tender
- Heat the oil in a saucepan, chop the onion, and fry it together with celery and carrots.
- Then add flour and thyme, mix well, and simmer for 2-3 minutes.
- Then add the broth and bring to a boil, making sure to stir the dish so that nothing burns.
- Chop the chicken and mushrooms and add them to the broth, season with salt and pepper, and simmer for about 10 minutes.
- Add rice and cream, bring to a boil, and cook for 5 minutes, then add chopped parsley.
