Ray Lampi, pitmaster of the American Royal Barbecue Hall of Fame, claims that it is the marinade that plays the main role in cooking meat, and only it can both spoil it and give the barbecue an amazing aroma and taste, HUFFPOST reports.

Mistakes during cooking:

1. Too much salt

If you salt the marinade too much, it will turn into brine and ruin the taste of the meat

2. Acid

The expert says that it is important to strike a balance here, as this is what determines tenderness and flavor.

Don't forget about the acids in your marinade - lemon, orange, and tomato juices, all of which are suitable for all types of meat. The ideal ratio is 2 cups of oil, 1/2 cup of acid, 1 teaspoon of salt

3. Time.

It is not necessary to leave the meat for 10 hours to marinate well. Sometimes 30 minutes is enough if you prepare the right marinade for the type of meat you have chosen.
