1. Gratin with artichokes

How to cook a delicious gratin with artichokes

Ingredients:

  • frozen artichoke hearts - 450 g
  • chicken broth - 1 cup
  • olive oil - 3 tbsp
  • grated Parmesan cheese - 50 g
  • breadcrumbs - 50 g
  • garlic - 1 clove
  • chopped parsley - 2 tbsp.
  • black and red ground pepper - 5 g each

Method of preparation:

  1. Heat olive oil well in a heavy-bottomed frying pan, add garlic, and fry for 1 minute.
  2. Add the artichoke hearts, chopped parsley, salt, and black, and red pepper, mix well, and fry for about 3 minutes until the artichoke hearts begin to brown on the edges.
  3. Pour in the wine and chicken broth and continue to fry for about 3 minutes.
  4. After that, transfer the finished artichokes to a baking dish.
  5. Melt the butter in a frying pan, pour it into a bowl, and add the breadcrumbs and Parmesan, sprinkle the artichokes and put them in the oven to bake until the top is browned – about 10 minutes.

2. Fettuccine Alfredo

Pasta with mushrooms and chicken fillet

Ingredients:

  • fettuccine pasta - 300 g
  • chicken fillet - 800 g
  • mushrooms - 600 g
  • olive oil - 3 tbsp
  • butter - 2 tbsp.
  • garlic - 2-3 cloves.
  • onions - 1 pc.
  • heavy cream - 200 g
  • grated Parmesan cheese - 70 g
  • oregano - 1 tsp.
  • salt, pepper - to taste

Method of preparation:

  1. Boil water in a deep saucepan, add generous amounts of salt, and boil the pasta.
  2. Cut the chicken into small pieces, and fry in olive oil until golden brown.
  3. Chop the mushrooms and fry them well.
  4. Chop the garlic and fry it in a frying pan with butter, add the meat, mushrooms, onions, salt, pepper, and cream, mix well, and simmer for 5 minutes.
  5. Finally, add the pasta, Parmesan, and oregano.

3. Beef carpaccio

Ingredients:

  • 350 g of beef (tenderloin, thigh flesh)
  • 50 g of parmesan cheese
  • 1 tsp of capers
  • 1 handful of arugula
  • a couple of pinches of salt

For the dressing:

  • 1 tbsp. of olive oil
  • 2 tsp. white wine vinegar
  • 2 tsp. capers
  • 1/4 tsp. dried basil
  • a couple of bunches of black pepper
  • a few drops of tabasco

Method of preparation:

  1. First, you need to rinse the beef well, cut off all possible films, and dry it.
  2. Wrap it in cling film and put it in the freezer for 1 hour, but no more, so that the meat is not over-frozen.
  3. After the time has elapsed, take out the meat and cut it into thin slices with a very sharp knife across the grain and put it in a bowl.
  4. Make the dressing: in a mortar, combine olive oil, basil, tabasco, salt, and black pepper, and mash everything well until smooth.
  5. Add the resulting dressing carefully to the meat so that it gets on each piece.
  6. Put the finished dish on a plate, add capers and Parmesan, and you can also add arugula.
