Ingredients
- quinoa - 100 g

- spinach - 1 bunch
- basil - 1 bunch

- garlic (cloves) - 3 pcs.
- flax seeds - 5 tsp.
- olive oil - 8 tbsp
- lemon juice - 8 tbsp
- sea salt - a pinch
- chili pepper - a pinch
Method of preparation:
- Boil the quinoa until tender.
- Wash and chop all the vegetables and herbs.
- Mix olive oil and lemon juice, add salt, and mix well.
- Mix the vegetables and herbs with the quinoa and pour over the sauce, don't forget to add the chopped garlic.
- This dish is best served cold.

Ingredients for the salad:
- Tomatoes - 2 pcs.
- Red onion - 1/2 pc.
- Sheep (goat) cheese - 70 g (can be replaced with feta cheese)
Marinade:
- Salt - 1/2 tsp.
- Sugar - 1/2 tsp
- Boiling water - 100 g
- Juice of 1/2 lemon
Green olive oil sauce
- Cilantro, parsley - 5 g each
- Olive oil - 20 g
- Salt - to taste
How to cook:
- Pour boiling water over the tomatoes for a few seconds to peel them, remove them, and cut them into nice slices.
- Chop half an onion, pour lemon juice over it, add salt, sugar, boiling water, and leave to marinate.
- For the sauce: take equal proportions of parsley and cilantro, whisk in a blender with salt and olive oil.
