Ingredients

  • quinoa - 100 g
  • tomatoes - 4 pcs.
  • cucumbers - 2 pcs.
  • parsley (chopped) - 3-4 cups
  • mint - 1 tbsp
  • spinach - 1 bunch
  • basil - 1 bunch
  • green onions - a bunch
  • garlic (cloves) - 3 pcs.
  • flax seeds - 5 tsp.
  • olive oil - 8 tbsp
  • lemon juice - 8 tbsp
  • sea salt - a pinch
  • chili pepper - a pinch

Method of preparation:

  1. Boil the quinoa until tender.
  2. Wash and chop all the vegetables and herbs.
  3. Mix olive oil and lemon juice, add salt, and mix well.
  4. Mix the vegetables and herbs with the quinoa and pour over the sauce, don't forget to add the chopped garlic.
  5. This dish is best served cold.

2. Salad with tomatoes and cheese according to the recipe of Tetiana Lytvynova

Ingredients for the salad:

  • Tomatoes - 2 pcs.
  • Red onion - 1/2 pc.
  • Sheep (goat) cheese - 70 g (can be replaced with feta cheese)

Marinade:

  • Salt - 1/2 tsp.
  • Sugar - 1/2 tsp
  • Boiling water - 100 g
  • Juice of 1/2 lemon

Green olive oil sauce

  • Cilantro, parsley - 5 g each
  • Olive oil - 20 g
  • Salt - to taste

How to cook:

  1. Pour boiling water over the tomatoes for a few seconds to peel them, remove them, and cut them into nice slices.
  2. Chop half an onion, pour lemon juice over it, add salt, sugar, boiling water, and leave to marinate.
  3. For the sauce: take equal proportions of parsley and cilantro, whisk in a blender with salt and olive oil.
  4. Pour the aromatic oil into a plate, and put the herbs, tomatoes, onions, and crumbled cheese on top.
