Mushrooms are a very underrated product, as they are not cooked as often as, for example, meat, vegetables, and fish. But this is a shame because they can be a great base and addition to many dishes.

FoodOboz has prepared 2 recipes for delicious mushroom dishes that will become your favorites.

1. Mushroom cream soup

Mushroom soup with breadcrumbs

Ingredients:

  • champignon mushrooms – 500 g
  • fillet – 300 g
  • potatoes – 2 pcs
  • carrots – 1 pc
  • onion – 1-2 pcs
  • flour – 50-70 g
  • hard cheese – 50 g
  • oil – 3 tbsp
  • fresh loaf – 3 pieces
  • salt, pepper – to taste

Method of preparation:

  1. Boil the broth: pour water into a saucepan, add a whole onion, randomly chopped carrots and fillets, and cook until tender – about 15-20 minutes.
  2. Wash the mushrooms and cut them into cubes, dice the onion, and fry them together until golden brown.
  3. Cut the loaf into small cubes and put it in the oven for a few minutes at 180 degrees to make crispy breadcrumbs.
  4. Add the flour to the pan with the onions and mushrooms, mix thoroughly, and remove from the heat.
  5. Peel and dice the potatoes together with the fillet and add to the pan, mix, pepper and salt.
  6. Put everything in a blender and grind until smooth, add the finished broth, and mix.

Serve the soup hot, sprinkled with breadcrumbs and hard cheese.

2. Mushroom pie with cheese

Delicious homemade pie

Ingredients for the dough:

  • Flour – 200-250 g
  • Butter – 100 g
  • Eggs – 2 pcs
  • Salt – 0.5 tsp
  • Sugar – 0.5 tsp
  • Baking powder – 1 tsp

Filling:

  • Champignons – 400 g
  • Onions – 2-3 pcs
  • Hard cheese – 150 g
  • Oil – 2-3 tbsp
  • Salt, pepper – to taste

Filling:

  • Sour cream – 200 g
  • Eggs – 2 pcs
  • Hard cheese – 50 g
  • Flour – 1 tbsp
  • Baking powder – 1 tsp

Method of preparation:

  1. Dough: beat eggs with salt, sugar, and butter, mix, and add flour and baking powder.
  2. Knead the dough with your hands, it should be elastic.
  3. Put it into a mold and prick it with a fork, so it will bake better.
  4. Fry the onions and mushrooms well in vegetable oil.
  5. Filling: mix eggs with sour cream, add flour and baking powder and hard cheese, mix thoroughly.
  6. Assemble the pie: put the mushrooms and onions on the dough, sprinkle with cheese, and pour generously with the filling.
  7. Put the pie in the oven for 40-50 minutes at 170-180 degrees.
