To begin with, it's worth noting that to make pastille, you need to choose soft varieties of pears, you can even take crumpled fruits, the main thing is that there is no rot.

The basic principle of making pastille is to dry the ground pear mass in an oven or dryer.

  1. Wash and dry the fruit.
  2. Cut out rotten spots, and remove the core.
  3. Cut into cubes for easy grinding.
  4. Using a blender or meat grinder, grind the pieces to a puree.
  5. Add spices to taste, and mix until smooth.
  6. Take a baking sheet, spread parchment over the entire area, and grease with refined oil.
  7. Pour the pear puree onto the baking sheet, and spread it evenly with a spatula around the entire perimeter so there are no thin spots.
  8. Put in the oven for 5 hours to dry at 100 C, leaving the oven door ajar to allow the moist air to evaporate.
  9. Set aside the prepared dry mass until warm.
  10. Take out the pastille with the paper, turn it over, and moisten it with water so that it is completely wet, making it easier to separate it.
  11. Cut into even rectangular plates, roll into tubes, and tie with a string.

How to make pastille at home

Ingredients:

  • pears - 10 pcs.
  • sugar - 250 g
  • water - 200 ml
  • cardamom - 4 pcs.
  • oil - 1 tbsp
  • pumpkin seeds (raw) - 20 g
  • sesame seeds - 20 g

Method of preparation:

  1. Wash the pears, peel and remove the seeds, cover them with 100 ml of water, and cook for 30 minutes.
  2. Then add the cardamom seeds and cook for about 10 minutes. Be sure to remove the grains after cooking and blend the fruit until smooth.
  3. Add sugar to the finished puree, stir, and cook for another 1 hour.
  4. Cover a baking sheet with parchment, grease it with vegetable oil, pour in the hot pear puree, and spread it well with a spatula or spoon to make an even layer.
  5. Cut the seeds in half and sprinkle them over the mashed potatoes along with the sesame seeds.
  6. Put in the oven for 3-5 hours at 100 C.
  7. Roll up the finished pastille into tubes and cut.
