Red fish soup
Red fish has always been expensive. It is usually served on holidays, and is considered a gourmet product. However, you can also prepare budget dishes if you buy other part of the fish, not the fillet, to maximize flavor and minimize costs.
For fish soup, it's best to use the bones - they're not heavy and make a very nourishing and rich broth. The idea was shared by Natalia Tymkiv on the Facebook page.
Ingredients:
- water - 2.5 liters
- red fish bones - 400 g
- potatoes - 2 pcs
- carrots - 1 pc
- onion -1 pc
- parsley
- dill
- bay leaf - 1 pc
- turmeric, salt, pepper - to taste
Method of preparation:
- Place the bones in cold water and salt.
- Bring to a boil and remove the foam.
- Add the bay leaf, onion and tied greens.
- Simmer for 15 minutes.
- Remove the fish and separate the meat from the bones.
- Add chopped potatoes and carrots to the broth.
- Take out the greens and add the rice.
- Cover and cook for 10 minutes.
- Add fish, salt, pepper and a pinch of turmeric for color.
- Stir and add the herbs.
- Turn off and let it brew for 15 minutes.
To make the most of this fish, you can make soup from the worst bones and leave the best ones for frying.
Salmon bones fried in batter
- salmon bones - 1 pc
- eggs - 2 pcs
- water - 1 tbsp
- flour - 2 tbsp
- salt to taste
- black pepper to taste
- lemon juice to taste
Method of preparation:
- Prepare the fish bones: rinse them, cut off the fins, tail and side strips of skin with scales.
- Cut into portions, pour over lemon juice, pepper, and salt to taste.
- Mix eggs, flour, a pinch of salt and water to make batter.
- Heat oil in a frying pan.
- Dip the fish pieces in the batter one by one and put them in the pan.
- Fry on both sides until golden brown.
