Ingredients

  • Butter - 230 gr
  • Powdered sugar - 97 gr
  • Salt - 1.5 g
  • Almond flour - 95 g
  • Eggs - 121 g
  • Flour - 397 g
  • Sugar - 50 g
  • Strawberry puree - 60 g
  • Gelatinous mass - 8 g
  • White chocolate - 100 g
  • Cocoa butter - 4 g
  • Cream - 28 ml

Method of making the dough

1. Combine almond flour, salt, powdered sugar, wheat flour. Add 180 g of pre-frozen and diced butter.

2. Mix the butter with the dry ingredients in a mixer until a sandy texture is formed.

3. Add 71 g of eggs (mélange) and knead the dough until a layer is formed.

4. Divide the dough into several pieces and roll out between parchment to a thickness of 3 mm, then leave in the refrigerator for 3-5 hours.

1. Combine 50 g of soft butter with sugar and 50 g of almond flour.

2. Add 50 g of eggs (melange) and mix until smooth.

How to prepare the cream

1. Cocoa butter and chocolate must be melted and heated to 40°C.

2. Separately melt the strawberry puree and add the gelatin mass.

3. Mix the puree and chocolate mass, and beat with a blender. Add the cream and blend again. Garnish with seasonal berries and fruits to taste
