Fluffy mini cheesecakes: what kind of cheese to use
Mini-cheesecakes are a delicious sweet dessert for coffee or tea that can be prepared quite quickly. There is no regular flour in the ingredients, so the dish is quite dietary. To make the texture tender and fluffy, use ricotta cheese for the base.
The idea of making ricotta mini-casseroles was published on the Instagram page of food blogger Sofia Martynuk (_sofia_martinuk).
Ingredients:
- ricotta – 250 g
- sour cream – 100 g
- sugar – to taste
- eggs – 1 pc.
- semolina – 2.5 tsp.
- vanilla sugar, a pinch of salt
Method of preparation:
1. Add the following to the ricotta: egg, salt, sugar, vanilla sugar, mix, add sour cream, semolina, mix.
2. Let it swell for 20 minutes.
3. Put into molds (you can use one large one), grease with butter or oil if necessary.
4. Bake at 180-200 degrees to brown a little. Approximately 35-50 minutes.
5. Let cool slightly in the molds and enjoy.
