Ingredients:
- boiled peeled beetroot - 4 kg (raw is 5 kg)
- tomatoes - 1 kg
- peeled onions - 1 kg
- oil - 400 g
- peeled pepper - 1 kg
- salt - 100 g
- sugar - 200 g
- vinegar - 225 g

Method of preparation:
1. Cut the tomatoes in half and rub so that the skin remains in your hands. You can do it with a blender.
2. Cut the onion into half rings and fry in 200 g of oil.

3. Chop the pepper in the same way and fry with onion.
4. Grate the boiled beets and add to the onions, peppers and tomatoes. Add 100 g of salt.

5. Simmer all this for 15 minutes from the moment of baking, stirring.
6. Remove from the heat.

7. Add sugar and vinegar and mix well.
8. Wait 5 minutes for the mass to infuse. Mix again and pour in jars.

9. Sterilize for another 15 minutes from the moment of boiling.

10. Roll up the lids. In winter, you just need to boil potatoes and meat. Then add the dressing and cabbage and the borscht is ready.
