With meat and potatoes: a recipe for open Tatar pies in the oven
Open pies are a traditional Tatar dish. Their peculiarity is that they are made with various combinations of fillings: meat and potatoes, meat and rice, and different types of meat. To make the pies more juicy, housewives often pour water or meat broth inside each one. The dish is hearty and quite filling.
Food blogger Tatiana (grenache_rose) shared a recipe for Tatar open pies with potatoes and meat on her Instagram page.
Ingredients:
- milk - 200 ml
- flour - 300 g
- eggs - 2 pcs.
- baking soda - 0.5 tsp.
- salt - 0.5 tsp
- butter - 50 g
Filling:
- minced pork or beef - 500 g
- onion - 1 pc.
- raw potatoes - 2 pcs.
- spices
- herbs
Method of preparation:
1. First, prepare the dough. To do this, beat the eggs with salt.
2. Add milk, sifted flour, and melted butter to the resulting mass. Knead the elastic dough. Leave to rest for 15 minutes.
3. Meanwhile, prepare the filling. To do this, grind the meat in a meat grinder and grate the onion and potatoes.
4. Mix vegetables, minced meat and spices.
5. At this stage, roll out the finished dough and cut out circles with a diameter of at least 15 centimeters.
6. Put the filling in the center of each circle. Roll the sides inward, leaving a small hole.
7. Put the pies on a baking sheet and brush them with egg. Bake for 25 minutes at 180 degrees.
