Salty and sweet dumplings on choux pastry: my family's recipes
You must admit that making dumplings brings the family closer together by one hundred percent, concentrating goodness and warmth at the table. One of the most vivid memories of childhood is cooking this dish.
There are dozens, maybe even hundreds of recipes for dumpling dough, most likely like borscht: each family has its own. I will share with you my family's recipes.
Dumplings with potatoes and mushrooms
Choux pastry:
200 g flour (8 tbsp with a slide, l part)
150 g flour (6 tbsp with a slide, l part)
200 ml of milk (0.8 cups of 250 ml)
100 ml of water (0.4 cups of 250 ml)
10 g of sugar for savory filling (or 30 g for sweet, 05 tbsp - 1.5 tbsp)
30 g of butter
2 g salt (pinch)
Filling:
500 g of potatoes
200 g of mushrooms
2 onions
50 g of butter
20 g of vegetable oil (1 tbsp)
salt and pepper (to taste)
Dumplings with cherries
for 70 dumplings
Choux pastry:
500 g flour (20 tbsp with a slide)
10 g of salt
250 ml of boiling water
50 ml of sunflower oil (refined)
Filling:
Cherry
Sugar.
