Skinless salmon fillet - 300 g
Fresh lemon - 30 g
Fresh orange - 30 g
Vodka - 30 g
Lemon and orange zest
Coarse sea salt - 150 g
Preparation:
Place the cleaned salmon fillet in a container with a mix of fresh juice and vodka and sprinkle generously with sea salt and citrus zest.
Leave for at least 12 hours. Remove the remaining salt before use.
