Culinary expert Yevhen Klopotenko shared his recipe and secrets for making delicious, crispy, and flavorful Peking duck on his YouTube channel (scroll to the bottom of the page to watch the video).
Expert tips:
- the duck for this dish should be as thin as possible, so it will roast well
- To make the duck crispy, carefully separate the skin from the meat with your hands
- Pour boiling water into a bowl, add spices – coriander, cinnamon, anise, and 180 g of salt, dip the duck in it, and leave it in this marinade for at least 12 hours. The duck will be tender and delicious.
Ingredients:
- Duck – 1 pc.
- Soy sauce – 60 ml
- Honey – 2 tbsp
- Ginger – 10 g
- Garlic – 2 cloves
- Thyme – 4 sprigs
- Rosemary – 2 sprigs
- Chili pepper (in flakes) – 2 pinches
- Salt and pepper – to taste
Method of preparation:
1. Prepare the duck: carefully separate the skin from the meat, then put the duck in a hot marinade with spices and salt for 12 hours, or up to a day.
2. After the time has elapsed, remove the duck and dry it well.
3. Pour oil into a saucepan and heat it well.
4. Cover the duck with a towel so that you can comfortably hold it and start pouring hot oil over it until the skin is browned and crispy.
5. Next, place the duck on a baking sheet, brush generously with honey, and bake for 30 minutes at 180°C.
6. Then pour soy sauce over it and return it to the oven, changing the mode to grill.
