Zucchini can be deliciously pickled for the winter, or made into a quick appetizer and served immediately with side dishes such as mashed potatoes, pasta, and cereal. In this case, you should choose ripe vegetables and make a good marinade for them.

Food blogger Olena Zeleniak (foodstories.helen) shared a recipe for instant marinated zucchini on her Instagram page.

Instant pickled zucchini recipe


  • Zucchini - 2 pcs.


  • olive oil - 1\3 cup
  • apple cider vinegar - 2 tbsp
  • honey - 2 tsp
  • garlic - 2 cloves
  • salt - 1 tsp
  • pepper - 1\2 tsp
  • basil - 1 tbsp.
  • cilantro - 1 tbsp.

Method of preparation:

1. Wash the zucchini and thinly slice into slices.

2. Then prepare the marinade. To do this, first grind the garlic through a press, then chop the basil and cilantro.

3. Mix the oil, vinegar, honey, chopped garlic, basil, and cilantro, as well as salt and pepper. Mix everything thoroughly.

4. Pour the marinade over the zucchini and mix well. Put the vegetables in a container, close the lid, and leave in the refrigerator overnight. It's ready!
