Easy no-bake chocolate dessert with currants: we share a simple recipe

If you want to make a delicious, light, summer dessert without baking, choose cookies, jelly, sour cream, and berries.

Food blogger Yuliia Vilich shared a recipe for a light chocolate dessert with berries and no baking on Instagram.

Ingredients:

Base:

  • chocolate biscuits – 110 g
  • melted butter – 55 g

Chocolate mass:

  • chocolate – 200 g (100 g milk and 100 g dark)
  • mascarpone – 250 g
  • heavy cream – 300 ml
  • gelatin – 9 g

Currant confit:

  • currant puree – 120 g
  • sugar – 50 g
  • gelatin – 6 g

Method of preparation:

1. Dough: grind the biscuits in a blender, add the butter, and mix with a spoon. Put the mixture into the mold, cover with foil, and refrigerate for 30 minutes.

2. Chocolate mass: heat the cream, bring it to a boil, remove from heat, and add gelatin, mix well until smooth. Add the chocolate and mix again and be sure to let the mass cool. Then add the mascarpone at room temperature and beat until smooth.

3. Separately, whip the cream until soft peaks and combine both masses.

4. Put the finished chocolate mousse on top of the cookies, shake the mold a little to spread the mousse gradually, and refrigerate until it hardens.

5. Currant confit: wash the berries, blend them in a blender to a puree, heat it, and pass through a sieve. Add sugar and bring to a boil, then add gelatin. Remove from the heat and let the confit cool to room temperature.

6. Then pour the mixture over the chocolate mousse and refrigerate for another 2 hours.
