Banoffee pie: how to make a delicate banana cake without baking
Banoffee pie is an old-fashioned cake originally from England. Simply put, this is an incredible dessert on a sandy base, combined with fragrant caramel and bananas under an airy cloud of cream. It is moderately sweet and extremely tender.

Ingredients for an 18 cm mold:
Base:
- almonds – 150 g
- coconut flakes – 50 g
- cocoa – 2 tbsp
- dates – 100 g
- coconut oil – 5 tbsp
- Maple syrup – 50 ml
Filling:
- bananas – 3 pcs
- lemon juice
caramel
- dates – 200 g
- peanut butter – 1 tbsp
Cream:
- fat coconut cream – 1 b
- thickener for cream – 1 p
- sugar – 3 tbsp
- vanilla extract/vanilla sugar – 1 p
Method of preparation:
1. Whip all the necessary ingredients for the base in a blender. The resulting mass should be slightly sticky to the hands.
2. Cover the mold with cling film and put the base, slightly forming the sides. Put the mold in the freezer.
3. Meanwhile, prepare the caramel. To do this, first pour boiling water over the dates for 10 minutes. Then drain the water and beat in a blender with peanut butter.
4. At this stage, you should prepare the cream. It is worth noting that the can of coconut cream should be kept upside down in the refrigerator overnight. After that, whip it with sugar and vanilla.
5. Form the cake. Put date caramel, sliced bananas, sprinkled with lemon juice, and cream on top. Garnish with coconut or almond flakes or cocoa.
