- eggs - 2 pcs.
- flour - 1 cup
- baking powder - 0.5 tsp.
- kefir - 150 ml
- vegetable oil - 2 tbsp
- salt - a pinch
- black pepper - to taste
- mint - a sprig

- Sift the flour twice through a sieve.
- Grate the zucchini on a coarse grater, add kefir, eggs, flour, baking powder, salt, and pepper, and mix well.
- Finally, pour the oil and chopped mint into the dough and mix again.
- Heat a frying pan, and spoon the dough in, it is better to fry the pancakes one at a time, each for 2-3 minutes over low heat, so they do not stick together.
Serve pancakes hot and with sour cream, so they will be even tastier. You can add fresh vegetables.
