Traditional adjika is made from tomatoes and peppers. This vegetable sauce is an addition to many meat and fish dishes in winter or a dressing for soups, borscht, or pilaf. But this appetizer can also be made with zucchini. The mass will turn out to be quite light, flavorful and hearty and, last but not least, very budget-friendly.

- zucchini - 2 kg
- sweet pepper - 200 g
- carrots - 200 g

- garlic - 3 heads
- tomatoes - 1 kg

- hot peppers - 3 pcs
- tomato paste - 140 g
Passing zucchini through a meat grinder

- oil - 120 ml
- sugar - 100 g
Stewing vegetables

- 9% vinegar - 80 ml
- salt - 2 tbsp (add 1 at first, then adjust to taste)

Method of preparation:
1. Pass all the vegetables through a meat grinder (medium) and squeeze the garlic.

2. Boil over high heat for 20 minutes. Add spices (except vinegar and garlic), boil for another 10 minutes, then add vinegar and garlic, and let it boil for 5 minutes again.

3. Transfer to sterilized jars.
