A chocolate muffin is the perfect pastry for coffee, cocoa, or tea. Its texture should be fluffy and, at the same time, moist. And it depends on what you use to make the dough.

The idea of making a wet cupcake was published on the Instagram page of food blogger Tally Koroleva (tallykoroleva). According to this technology, the cupcake is made with kefir.

Ingredients for the dough:

  • 125 g sifted flour
  • 65 g of cocoa
  • 3/4 tsp. baking powder
  • 1/2 tsp of salt
  • 1/3 cup of kefir at room temperature
  • 1 tsp of instant coffee or brewed coffee (just put it in the kefir)
  • 250 g of butter at room temperature
  • 1 cup of sugar
  • 4 eggs at room temperature
  • 1 teaspoon of vanilla extract

  • 0.5 cups of cream;
  • 0.5 cups of chocolate drops
  • 1 tsp vegetable oil.

Method of preparation:

1. Sift the flour, cocoa, baking powder, and salt together twice in a medium bowl. Set aside.

2. Dissolve the coffee in the buttermilk or yogurt. Set aside.

3. Put the butter in the mixer bowl, and beat on medium speed for 3-4 minutes. Then gradually add sugar and beat for 4-5 minutes until light and fluffy.

4. Add one egg at a time to the mixer (wait until the egg is combined before adding the next one). Scrape the sides of the mixer bowl at least 2 times while adding the eggs.

5. Add the vanilla and coffee/buttermilk mixture and stir until smooth.

6. Reduce the mixer speed to low and add the dry ingredients.

7. Pour the batter into the greased mold. Put in the oven for 50-55 minutes. Make sure the cake is done by sticking a toothpick in the center. Let it cool for 15 minutes. Then remove the cake from the mold and let it cool on a wire rack for 1 hour before glazing.

1. Heat the cream over medium heat until it begins to simmer and bubbles form on the edges of the pan. Remove from the heat and stir in the chocolate drops.

2. Let stand for 5 minutes, then add a tsp of oil and whisk until smooth and shiny. Let it cool slightly. Drizzle the cake with the icing.
